Add water, bring to a boil. When water begins to boil, turn heat to low. Simmer, covered for 15-20 minutes. Turn off heat. DONT PEEK. LEAVE IT COVERED for 30 minutes. Remove lid, mix salt and juice together until dissolved. Pour over rice and add cilantro.
